SPINY LOBSTER
Palinurus Elephas
Live, fresh and frozen.
Origin: Morocco.
Proof of its freshness is that its tail is always curved inwards and, when you grab the lobster, the tail moves strongly triggering a loud sound.
Denominations: FR. Langouste; IT. Aragosta; ES. Langosta Roja.

CRAWFISH
Palinurus Mauritanicus
Live, fresh and frozen.
Origin: Mauritania.
The characteristic pink tone is due to the lack of light which reaches the bottom of the sea where it lives (between 100 y 300m).
Denominations: FR. Langouste rose; IT. Aragosta di fondale; ES. Langosta Rosa.

LOBSTER
Homarus Gammarus
Live, fresh and frozen.
Origin: Morocco.
Before it is cooked, it has a blue colour with spots; once cooked it reverts to its characteristic orange-red bright colour.
Denominations: FR. Homard; IT. Lupicante; ES. Bogavante.

SPIDER CRAB
Maja Squinado
Live, fresh and frozen.
Origin: Morocco.
The surface of the shell is covered with grooves where it holds seaweeds which serve as camouflage.
Denominations: FR. Araignée de mer; IT. Granceola; ES. Centollo.

OCTOPUS
Octopus Vulgaris
Frozen.
Origin: Morocco.
It has an ink deposit that it uses in order to flee from the threats it faces at the bottom of the sea.
Denominations: FR. Poulpe; IT. Polpo; ES. Pulpo.

SQUID
Loligo Vulgaris
Frozen.
Origin: Morocco.
In the mouth it has a sharp and robust beak, that it uses to kill and tear its prey; the eyes are located on each side of the head.
Denominations: FR. Calamar; IT. Calamaro; ES. Calamar.

CUTTLEFISH
Sepia Officinalis
Frozen.
Origin: Morocco.
Inside its body, the cuttlefish has a long, oval bone that it uses to regulate its floating level.
Denominations: FR. Sépia; IT. Seppia; ES. Choco.

SARDINE
Sardina Pilchardus
Frozen.
Origin: Morocco.
They are omnivorous, feeding mainly on phytoplankton and zooplankton, and also on small animals such as larvae or crustacean eggs.
Denominations: FR. Sardine; IT. Sardina; ES. Sardina.

MACKEREL
Scomber Japonicus
Frozen.
Origin: Morocco.
During the winter, it remains at the bottom of the sea without feeding; then it rises to the surface and feeds on zooplankton, and later on sardines and small anchovies.
Denominations: FR. Maquereau; IT. Sgombro; ES. Caballa.

HORSE MACKEREL
Trachurus Trachurus
Frozen.
Origin: Morocco.
The hatchlings have a good chance of survival, since during the first phase of their lives they take refuge among the tentacles of jellyfish.
